Dal Bhat with Passion fruit drink
這次烹飪比賽的主題是「善用每一部分食材」,於是我們決定走進街市,親身觀察日常生活中最常被忽略、甚至被浪費的食材部分。經過一番細心探索,我們發現了黃金百香果。我們發現許多人只取其果籽入饌,卻將略為厚實的外皮棄之不顧。我們不禁思考:這層外皮是否也能吃呢?棄掉也實在可惜,正如馬鈴薯的皮,曾經被視為廢料,如今人們會用薯皮製作美味的菜式。我們大膽實驗,將整百香果連皮帶籽與梨子一同切件,加冰放入攪拌機中製作成高纖及美味的飲品。結果出乎意料——果香濃郁、口感層次豐富,成為一道真正「零浪費」的創意飲品。
主菜方面,我們選擇了尼泊爾的傳統菜式—— 達八(Dal Bhat),並以本地新鮮蔬菜入饌,減少碳足跡,支持可持續農業。為了貫徹「全食材」的精神,我們特意保留青瓜及番茄的外皮,讓其天然的清香與口感成為菜式的一部分。這不僅減少浪費,也讓食材的原味得以完整呈現。另外,我們所用醃菜就像提醒大家只要處理得宜,所有蔬菜所有部份也能吃,不要浪費。
Dal bhat
Ingredients: 1bowl of cooked rice, Onion 50gm, Garlic few cloves, Tomato 50gm, Lentils 100gm, Cucumber 1 piece, Achar 50gm, Chili 2 pieces, Ginger few pieces, Coriander few pieces, Water 1 liter, Oil 1tbsp, Cumin 1tsp, Turmeric powder 1/2 tsp, Garam masala 1/2 tsp, Salt 1/4 tsp, White pepper 1/4 tsp
Cooking Procedures:
1. Cook the rice.
2. Wash lentils and soak lentils for 10-15 minutes.
3. Chop onion, garlic, tomato, ginger and cucumber.
4. Prepare the spices.
5. Heat oil on in a large pan and add your chopped spring onion and garlic. Stir on high heat until the spring onion is softened.
6. Stir in the spice. Turn the heat down to medium and cook for 2 minutes, stirring often.
7. Add the chopped tomato, ginger and cucumber to the pan and stir for another minute.
8. Add the lentils and cook for 15 minutes.
9. Cover in the boiling water and simmer until the lentils are soft.
10. Season with sea salt and white pepper to taste.
11. Stir through your chopped coriander.
12. Add achar to decorate and serve.
Passion Fruit and Pear drink
Ingredients: 1 Passion fruit, 1 Pear, Some ice
Cooking Procedures:
1. Wash passion fruit and pear.
2. Cut in four pieces so that it is easier to blend.
3. Blend all the ingredients
